How to store wines advises famous Italian sommeliers

30 of January '23

It is said that wine is pure magic.... This refined beverage has accompanied and honored the special moments in our lives since ancient times. It invites us to travel through lands, cultures, histories and traditions.

The taste of wine is also a mirror of memory. It accompanies memories of important events that aroused strong emotions in us, which we can recreate years later by returning to the chosen taste. And enjoying it together is a spontaneous experience with which we express our joy of being in the company of those closest to us. The famous Italian sommeliers Enrico Mazza and Gennaro Buono talk about how to store wine properly so that it retains its magical qualities for a long time.

Ideal conditions

Wine is a living thing. The conditions in which it is stored affect the preservation of its aromas and flavors. For storage, a traditional cellar will work perfectly, as long as it meets several conditions.

The temperature in the room should be constant at around 11-12°C to allow the wines to age properly. A lower temperature would hinder the further maturation of the wine, causing the formation of small crystals. Temperatures above 18°C, on the other hand, would excessively accelerate aging, causing deterioration in quality. It is therefore important to avoid any thermal shocks.

The humidity in the cellar must also be constant at around 70%. Excessive humidity would cause the formation of fungi and mold, which are the cause of the destruction of the cork and, consequently - the deterioration of the quality of the liquor itself. Excessive dryness of the environment, on the other hand, causes bottle corks to dry out and constrict, exposing the wine to the air and causing oxidation. Therefore, bottles must be placed horizontally so that the liquid moistens the cork.

Exposure to light, or worse, direct sunlight, exposes wine to degradation and oxidation. In turn, ultraviolet rays and light emitted by fluorescent lamps are responsible for imparting unpleasant odors to wine, making it undrinkable and even unhealthy. The ideal solution, therefore, is to store wine bottles in a dark or dimly lit environment. This ensures that their taste qualities are preserved for a long time.

The bottles should also be protected from strong vibrations, causing the stirring up of sediment, which should settle to the bottom.
